HOW TO COOK WATERLEAF SOUP

Waterleaf soup is one of the most loved or most eaten soup in Nigeria, the soup is loved by almost every body in Nigeria because it is a very delicious meal and full of vitamins. The soup is very popular with the Efik ethnic nationality

INGREDIENTS

Red oil

Waterleaf

Periwinkle

Grounded crayfish

Ugu

Onion

Meat/Fish

Stockfish

Pepper/Salt

Snail

PREPARATION

Wash and slice the waterleaf, you can slice it at the market or you can do that your self if you have a sharp knife. Slice your Onion too and keep.

Wash the meat and boil, add onion,seasoning cubes etc to the meat and boil till it is almost done. Wash your stockfish and put it in hot water to soften it.

Cut your periwinkle, I personally prefer it to be in its shell, not a fan of the ones already removed it shells. Cut the periwinkle half and half and throwaway the tail part if the shells ,then wash thoroughly to avoid dirt’s because periwinkle shells are always dirty,wash like 5-7 times before cooking.

Remove your snails from its shells and wash with alome until they are clean and neat devoid of gums.

DIRECTION

Pour the sliced waterleaf into a pot, pour all the ingredients also including salt and maggi etc. Now place the pot on fire,add oil and allow to boil. Please don’t put water in anyway because the waterleaf has its own water. Keep stirring and cook for about 10-15 minutes and your waterleaf soup is ready.
