OFE AKWU or popularly known as Banga STEW is a very good and delicious delicacy/food known to be eaten by majority of Southern Nigerian tribes, in fact the Igbo people of South Eastern Nigeria are know to be the major cookers of this special food. This STEW is not ordinary STEW but a 2 in one STEW because OFE AKWU/Banga STEW can be eaten with rice as the best alternative to STEW or it can be eaten with garri,akpu,semovita,wheat etc as a good alternative to any type of soup.
Enough of introduction,now let’s get into the main issue or reason for this post/page.
1 full washing bowel of palm fronds/AKWU.
Meat (either fresh or dried).
Fish (either fresh or dried).
2 cubes of seasoning cube.
Wash the Palm fronds/AKWU or Banga thoroughly,place in a pot,add enough water and place on a fire. Boil till the AKWU or Banga start cracking and breaking,by that time,it is now ready to be processed. Note- you can add more water if the water you are cooking the AKWU with goes dry while the AKWU/Banga have not cracked or done.
Pour the AKWU/Banga into a mortar and grind or you can still process it with hands’ that depends on the quantity of the AKWU/Banga and if you can endure the hotness;. That’s by the way, after you might have finished grinding it, pour water into the mortar or bowel-(if you are using hands). Wash very well,remove the fiber and Palm kernel and filter the water to remove the small particles in it. Note- add water depending on the quantity of your AKWU/Banga and make sure the AKWU Banga water is a little bit thick,so avoid putting excess water.
Wash your meat and fish with salt and boil if it’s fresh fish and meat.
Slice your scent-leaf accordingly based on your taste.
Slice your Onion too.
Place the AKWU/Banga water or the water you used to process the Palm fronds on pot and place on fire,cover the pot and leave it to be boiling. Boil the water till it become thick and you began to see some Palm oil/Red oil in the pot, by this time, the AKWU/Banga water is now done, add the fish and meat your boiled and Onion in to the pot, allow to simmer for about 2-3 minutes, add crayfish, add seasoning cubes for your taste, allow to boil for a while, Note- keep checking the thickness and add little water to it if it becomes over thick,depending on your thickness taste. Now add the scent-leaf and leave for a minute, then put down the pot because your delicious food is now ready.
You can serve with white rice or you can serve with akpu,wheat,garri etc.
HEALTH BENEFITS OF OFE AKWU/Banga STEW
AKWU/Banga STEW/SOUP is a very nice alternative to normal tomatoes stew, in fact it supersedes tomatoes stew both in nutrients and taste.
It does not give malaria, unlike the normal tomatoes stew that we use to fry with cooking oil (ground but oil) which gives malaria when taken in excess.
It is Rich in fat and oil.
The scent-leaf leaf is very medicinal in that it can prevent and cure many ailments. In Igbo land, people use the scent-leaf to cure themselves of many diseases and also prevention,i t also contains a large number of Vitamins. Do scent-leaf is a win win for you in your dish.
Fish/meat and crayfish are good source of protein which your body needs etc.
In conclusion, AKWU/Banga is the best STEW you can ever taste and if you haven’t tasted it, hmmmmm sorry you are missing a lot.by
